Setting Sun Peach Cocktail

It takes a little practice to get the colours right in this cocktail, but it is a beautiful colour and certainly a great flavour. The touch of Grenadine on the top resembles the sun as it goes down over the ocean – dream away and think you are on a Caribbean island!
Serves: 1
Ingredients:
o 5fl.oz/150ml Prosecco or Champagne
o 2fl.oz/60ml peach puree
o 2 dashes grenadine
o 2 fresh raspberries
Method:
Pour the peach puree into a cold champagne glass.
Top up with prosecco or champagne.
Add the grenadine to the top of the ingredients, and plop two raspberries onto the top.
Serve immediately.
Tip: If you are feeling a little more adventurous, make your own peach puree – it does taste a lot better. Simply remove the stones from the peaches and puree as many as you need depending on how many drinks you are making. You can do this the day before and leave covered in the fridge.
